Broccoli Salad



Always looking for ways to add more veggies into my diet, and trying to appease the rest of the carnivores in my house, I gave this recipe a try. It was really good. Of course, modification was necessary, but all worked out great.


Ingredients:

3 cups fresh broccoli florets
1 cup shredded cheddar cheese
8 strips of bacon (I used turkey bacon) 
1/2 cup finely chopped onion 
1/2 cup craisins
1/4 cup mayonnaise
1/4 cup non-fat plain yogurt or non-fat plain Greek yogurt
1/4 cup white vinegar
1/8 tsp powdered Stevia 

Directions:

In a large bowl combine broccoli, cheese, bacon, onion and craisins. In a small bowl whisk the mayonnaise, yogurt, vinegar and Stevia. Pour over broccoli mixture and stir to coat. Cover and refrigerate for at least 1 hour before serving.
