Ice Cream is one of my favorite foods in the whole world. I think it should be it's own food group and part of a healthy diet..... I tried this recipe out during the summer, and fortunately took the time to snap a picture of it before I devoured it: I am just now getting up here on the blog. It is so good, but then ice cream is kind of like pizza or sex - even when it's bad it's good. This is one of the easiest ice cream recipes I have ever made.
Ingredients
2 cups milk
2 cups heavy cream
1 cup sugar
1/2 tsp salt
1 tsp vanilla
1 tsp peppermint extract
green food coloring
1 cup miniature semisweet chocolate chips
Directions
- In a large bowl stir together milk, cream, sugar, salt, vanilla and peppermint until sugar is dissolved. Color to your liking with the green food color.
- Pour mixture into an ice cream maker and freeze according to the manufacturer's instructions. After about 10 minutes into the freezing, when the ice cream maker starts slowing slightly, add the chocolate chips.
I have done this recipe twice. The first time I did it I used crushed Oreo cookies in place of the chocolate chips. It was amazingly delicious, but make sure you only add them at the very end. I added mine too soon and I ended up with chocolate-mint ice cream because my Oreos just blended in with everything.
