Sesame Orange Shrimp


I found this recipe on Martha Stewart's web site. (I know she's kind of a freaky criminal, but that lady has a lot of good ideas and a lot of talent backing her.)

I didn't change this recipe too much actually, it was pretty good all on it's own. The only thing I really did differently is I substituted olive oil for the vegetable oil, omitted the salt and pepper and I added some of the leftover cornstarch mixture to the orange sauce - I was just too impatient to let it "boil down". 

This was a big hit with everyone.

Ingredients
2 large egg whites
1/4 cup corn starch
1/4 cup sesame seeds
1 1/2 pounds medium shrimp, peeled and deveined
1/4 cup olive oil (or so, just go by what is needed while frying)
1 cup orange juice
1 Tb. sugar
4 scallions, trimmed and thinly sliced

Directions

In a large bowl, whisk together egg whites, cornstarch, and sesame seeds. Add shrimp and mix until shrimp is completely covered.

Heat olive oil in a large skillet, over medium-high heat. Working in two or three batches, cook shrimp until golden and crisp - 2-3 minutes per side. Transfer to a paper towel-lined plate to drain. 

Once your shrimp is done cooking, add orange juice, soy sauce and sugar to the skillet. I also added about 1 Tb. of the cornstarch mixture that coated the shrimp. Cook over med-high heat until thickened, about 2-3 minutes. Return shrimp to skillet and add scallions. Cook until heated through and shrimp is coated with sauce, about 1 minute.
