Cinnamon and Sugar Popcorn


Jessica and I have started girls nights every Tuesday. Jeff works and Aaron has band practice, so we make sure to keep our calendars free on that night to spend together. Usually we use this night to catch up on our episodes of "Fringe" but since the season is over we have been using it as a chick flick night. What better thing to go with a movie than popcorn!

Try this for your next movie night, it's great!

Ingredients

1 cup unpopped popcorn
1/4 cup butter
1/2 cup honey
2 tsp cinnamon
1/2 tsp salt
1/2 tsp vanilla

Directions

Preheat oven to 250 degrees.

Pop the popcorn using an air popper and place in a large bowl. While the popcorn is popping melt the butter in a small saucepan. Add the honey, cinnamon, salt and vanilla and cook until thick and bubbly.

Slowly pour cinnamon mixture over popcorn while stirring. Mix until your popcorn is evenly coated. Spread popcorn onto a large baking dish. Bake for 10 minutes, then turn off the heat of the oven and let the popcorn set in the oven for another 20 minutes. 

We ate the popcorn slightly warm, because we couldn't wait, but it taste great cooled too. A perfect make-ahead popcorn! It would be great for road trips and after school snacks.

I bet I have more cookbooks than you! This is a great idea. I am always searching through cookbooks because I feel like there is something out there I am missing out on. I have read through every one of mine, more than once. My shelf is also bowing down in the center! Good Luck with this.
