Southwest Chicken Wraps


This is a perfect little wrap for a picnic - which is what we did with it last weekend. Packed full of veggies and protein from chicken and black beans it's actually pretty healthy for you to boot.


Ingredients

1/4 cup reduced-fat sour cream
2-3 Tb. chopped jalapenos - according to taste (I like it spicy!)
2 Tb. fresh lime juice
1 tsp. dried cilantro
3 cups shredded chicken or turkey
1 - 15 oz can black beans
1 large tomato, chopped
1 avocado, thinly sliced 
3 cups baby spinach
4 sandwich wraps or tortilla shells
  1. In a bowl, whisk together sour cream, jalapenos, lime juice and cilantro. Add chicken, black beans and tomato. Stir until mixed well.
  2. On your sandwich wrap or tortilla shell, put about 1/3 cup chicken mixture down the center. Top with spinach and avocado. Roll up burrito style, ending with seam side down.
